Yellow tea
Jun Shan Yin Zhen, a very famous tea.
One yellow tea is one green tea Chinese who underwent a phase of post-enzymatic. The green teas of great quality are sometimes also called yellow tea.
Manufacture
After and a rolling, the covered sheets of a wet fabric are piled up in small heaps, during more than twenty hours, with a percentage of moisture located between 80 and 90 %. They remain thus until it oxidize. They undergo then short dessication.

Varieties
- Jun Shan Yin Zhen ("money Needles of the mount of the Emperor") is collected on the mount Jun Shan in the province of . These sheets are covered with one duvée gilded. It is a very famous tea.
- Meng Ding Huangya ("yellow buds of the Meng Mount") comes from the province of Sichuan.
